Meat prices in Baku markets vary widely, not only from seller to seller, but also depending on the type of meat, the age of the animal and the part of the carcass.
Beef, veal, mutton and lamb are currently sold at different prices across the capital’s markets. According to sellers, regular beef starts at around 12-13 manats ($7-$8) per kilogram, while more expensive cuts can cost much more.
Sellers say several factors affect the price, including the type of animal, its age, sex and, in some cases, how it was raised. Meat from younger animals is usually more expensive.
At the market, ordinary beef is sold for about 12-13 manats ($7-$8) per kilogram. Veal can cost around 18 manats ($11).
Mutton is generally offered for 12-14 manats ($7-$8) per kilogram, while lamb is more expensive, usually around 20-22 manats ($12-$13).
Some cuts cost even more. Boneless beef is sold for around 15-16 manats ($9) per kilogram, while tenderloin can reach 20-25 manats ($12-$15).
Butchers say cheaper cuts usually include shank, neck and some front sections of the carcass. These can be found for around 10-12 manats ($6-$7).
More expensive cuts include entrecote, loin, fatty pieces and boneless meat. These are often sold for 13-16 manats ($8-$9), and in some cases higher.
Butcher Rajif Isfandiyarov said the main price difference in beef comes from whether the meat is from an adult animal or a young calf. According to him, the difference in quality may not always be dramatic, but veal usually cooks faster.
Mutton is also available in Baku markets. Sellers say it can cost 18-20 manats ($11-$12) in some places, while they offer it for around 15-16 manats ($9) per kilogram.
According to traders, most of the meat sold in these markets comes from local farms. Animals for slaughter are mainly brought from Barda, Beylagan, Dashkasan, Imishli and Aghjabadi regions of Azerbaijan.
Sellers also claim that imported meat is not being sold at these stalls and that buyers are mainly offered products from local farms.
