Azerbaijan’s food safety authorities have uncovered cases in which imitation caviar was sold to consumers as a natural product, according to a report by Baku TV.

The Food Safety Agency of Azerbaijan said inspections identified 10 cases involving caviar sold without labels or the required accompanying documents.

In two additional cases, artificial caviar was presented to customers as natural fish roe. Authorities said measures were taken to stop consumers from being misled.

Imitation caviar is typically made from plant-based ingredients and gelatin-like substances. Flavorings, aromas and food coloring may be added to reproduce the taste and appearance of natural roe.

The sale of imitation caviar is not prohibited, but the product must be clearly labeled as artificial or imitated. Packaging should also include the full list of ingredients, production and expiration dates, and information about possible allergens.

Food specialists warned that excessive levels of flavorings, coloring agents or other additives may cause allergic reactions, skin rashes, itching, headaches and digestive problems.

Young children, pregnant or breastfeeding women and people with chronic health conditions may face greater risks and should be particularly careful when consuming products of uncertain origin.

Sellers interviewed by Baku TV said natural caviar can sometimes be distinguished by its texture. Genuine roe contains natural oils and liquid, while individual eggs usually burst easily in the mouth.

Imitation caviar may have a firmer, rubber-like texture and roll around without bursting in the same way.

Consumers are advised to avoid caviar sold without proper labeling, ingredient information or supporting documents, especially when the price is significantly below the usual market level.
